Wild Turkey Roulade

Wild Turkey Roulade Ingredients:

  • 1 boneless, skinless turkey breast, about 3-4 pounds
  • ¾ cup soy sauce
  • ¼ cup water
  • 2 tablespoons honey
  • 2 tablespoons chili-garlic paste
  • ½ teaspoon ginger
  • 2 Granny Smith apples, thinly sliced
  • 2 sprigs fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup dry white wine

Instructions:

  1. Preheat oven to 375°F.

  2. In a small bowl, whisk together soy sauce, water, honey, chili-garlic paste, and ginger.

  3. Lay the turkey breast flat on a cutting board and pound it to an even thickness.
  4. Spread the apple slices and rosemary over the turkey breast. Season with salt and pepper.
  5. Roll the turkey breast up tightly and tie it with butcher’s twine.
  6. Heat olive oil in a large skillet over medium heat. Sear the turkey roulade on all sides until golden brown.
  7. Transfer the roulade to a roasting pan and pour the soy sauce mixture around it.
  8. Add the white wine to the roasting pan.
