Savory Wild Turkey Roll with 4 Forest-Inspired Flavors

Wild Turkey Roll Ingredients:

    • 1 boneless, skinless turkey breast, about 3-4 pounds
    • 1/2 cup chopped onion
    • 1/2 cup chopped celery
    • 1/2 cup chopped carrots
    • 1/2 cup chopped mushrooms
    • 1 clove garlic, minced
    • 1 tablespoon olive oil
    • 1/2 cup dry white wine
    • 1/2 cup chopped fresh herbs (such as sage, rosemary, and thyme)
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 cup cooked rice or wild rice stuffing

Instructions:

    1. Preheat your Traeger grill to 350°F.
    2. In a large skillet, heat olive oil over medium heat.
    3. Add the onion, celery, carrots, and mushrooms and cook until softened, about 5 minutes.
    4. Add the garlic and cook for 1 minute more.
    5. Stir in the white wine, herbs, salt, and pepper.
    6. Cook until the liquid has reduced by half.
    7. Add the cooked rice or wild rice stuffing to the skillet and mix to combine.
    8. Lay the turkey breast flat on a cutting board and spread the stuffing mixture over it.
    9. Roll the turkey breast up tightly and tie it with butcher’s twine.
    10. Season the outside of the turkey with salt and pepper.
    11. Place the turkey roll on the grill and cook for 1-2 hours, or until the internal temperature reaches 165°F.
    12. Let the turkey rest for 10 minutes before slicing and serving.
